1 lb beef chuck roast, cut into 1-inch pieces

2 cups beef broth

1 packet ranch dressing mix

1 packet au jus gravy mix

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

4 cups egg noodles

2 tablespoons olive oil

1 cup sliced pepperoncini, drained (plus some juice)

Fresh parsley, chopped for garnish

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Add the beef chuck pieces and brown them on all sides, about 5-7 minutes.

    In a separate bowl, mix the beef broth, ranch dressing mix, au jus gravy mix, garlic powder, onion powder, and black pepper until well combined.

      Pour the mixture over the browned beef in the skillet. Stir in the sliced pepperoncini and a couple of tablespoons of its juice for added tanginess.

        Reduce the heat to low, cover the skillet, and let it simmer for about 45 minutes to 1 hour, stirring occasionally until the beef becomes tender.

          In the meantime, cook the egg noodles according to package instructions. Drain and set aside.

            Once the beef is tender, add the cooked noodles to the skillet, stirring gently to combine. Allow it to heat through for about 5 minutes.

              Taste and adjust seasoning if needed, adding more pepperoncini juice for extra flavor if desired.

                Serve hot and garnish with freshly chopped parsley prior to serving.
