4 large russet potatoes, thinly sliced

2 cups heavy cream

1 cup shredded sharp cheddar cheese

1 cup grated Gruyère cheese

3 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon nutmeg

1 tablespoon olive oil

Optional: Fresh parsley for garnish

Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil.

    In a medium saucepan over low heat, combine the heavy cream, minced garlic, thyme, rosemary, salt, pepper, and nutmeg. Stir occasionally until heated but not boiling, allowing the flavors to meld for about 5 minutes. Remove from heat.

      Layer half of the sliced potatoes in the prepared baking dish. Pour half of the creamy mixture over the potatoes, followed by half of the cheddar and Gruyère cheeses.

        Add the remaining potato slices on top followed by the remaining creamy mixture. Finish with the remaining cheeses sprinkled over the top.

          Cover the dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 20-25 minutes, or until the top is golden brown and the potatoes are tender when poked with a fork.

            Once done, remove from the oven and let it sit for about 10 minutes to cool slightly and allow the flavors to settle.
