4 salmon fillets

1 pound asparagus, trimmed

1 pound baby potatoes, halved

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon paprika

1 teaspoon fresh lemon zest

Salt and pepper to taste

2 tablespoons fresh parsley, finely chopped

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper for easy cleanup.

    Prepare the Potatoes: In a mixing bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, garlic powder, paprika, salt, and pepper. Spread them evenly on one side of the lined sheet pan.

      Start Roasting: Place the sheet pan in the preheated oven and roast the potatoes for about 15 minutes. This will help them to begin crisping up.

        Season the Salmon and Asparagus: While the potatoes are roasting, season the salmon fillets with salt, pepper, and fresh lemon zest. Drizzle with 1 tablespoon of olive oil. For the asparagus, simply toss with salt and pepper.

          Add Salmon and Asparagus to the Pan: After 15 minutes, remove the sheet pan from the oven. Push the potatoes slightly to one side and add the asparagus alongside them. Place the seasoned salmon fillets in the center of the pan.

            Roast Everything Together: Return the pan to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through (internal temperature should be 145°F/63°C) and the asparagus is tender. Check the potatoes for crispiness; if needed, return them to the oven for an extra few minutes.

              Garnish and Serve: Once everything is cooked, remove the sheet pan from the oven. Sprinkle fresh parsley over the salmon and vegetables. Serve with lemon wedges on the side for squeezing over the top.
