1 lb (450g) ground lamb or beef (or plant-based ground meat for a vegetarian option)

1 cup frozen peas and carrots mix

1 cup corn kernels

1 onion, chopped

2 cloves garlic, minced

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce (or soy sauce for a vegetarian option)

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

4 large potatoes, peeled and cubed

1/2 cup milk (or plant-based milk)

4 tablespoons butter (or vegan butter)

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large skillet, heat a tablespoon of butter over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent (about 3-4 minutes).

      Add the ground lamb or beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes. If using plant-based meat, cook until heated through.

        Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Then, add the mixed peas, carrots, and corn, cooking for another 3-4 minutes until the veggies are tender.

          In a separate pot, boil the cubed potatoes in salted water until tender (about 15-20 minutes). Drain and return to the pot.

            Add the milk and remaining butter to the potatoes, mashing them until smooth. Season with salt and pepper to taste.

              In a baking dish, layer the meat and vegetable mixture evenly on the bottom. Spoon the mashed potatoes on top, smoothing it into an even layer.

                Use a fork to create a decorative pattern on top of the mashed potatoes.

                  Bake in the preheated oven for 25-30 minutes, or until the top is slightly golden and the filling is bubbling.

                    Let it cool for a few minutes, then garnish with fresh parsley before serving.
