8 ounces lo mein noodles

1 pound large shrimp, peeled and deveined

2 tablespoons sesame oil

1 cup snap peas, trimmed

1 red bell pepper, sliced

1 cup bean sprouts

3 green onions, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon hoisin sauce

Salt and black pepper to taste

Sesame seeds for garnish

Cook the Noodles: In a large pot, bring water to a boil and add the lo mein noodles. Cook according to package instructions (usually 4-6 minutes), then drain and rinse under cold water to stop the cooking. Set aside.

    Prepare the Shrimp: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the shrimp and sauté for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and grated ginger, stirring until fragrant (about 30 seconds).

        Add the Veggies: Toss in the snap peas, sliced bell pepper, and bean sprouts. Stir-fry for 3-4 minutes until the vegetables are just tender but still crisp.

          Combine: Return the cooked shrimp to the skillet. Add the cooked lo mein noodles, soy sauce, oyster sauce (if using), and hoisin sauce. Toss everything together until well combined and heated through (about 2-3 minutes). Season with salt and black pepper to taste.

            Serve: Remove from heat and garnish with chopped green onions and a sprinkle of sesame seeds.
