8 ounces ziti pasta

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup spinach, chopped

1 teaspoon dried basil

1 teaspoon crushed red pepper flakes (adjust to taste)

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Ziti: In a large pot of salted boiling water, cook the ziti according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

    Sauté the Shrimp: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Then add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove shrimp from the skillet and set aside.

      Add the Vegetables: In the same skillet, add the halved cherry tomatoes and cook for about 2-3 minutes until they soften. Add in the chopped spinach and cook until just wilted.

        Make the Sauce: Pour in the heavy cream, stirring well to combine. Add the dried basil, crushed red pepper flakes, salt, and pepper. Let the mixture simmer for about 5 minutes until slightly thickened. If the sauce becomes too thick, add in some reserved pasta water to reach desired consistency.

          Combine and Coat: Add the cooked ziti and shrimp back into the skillet. Toss everything together gently until the pasta and shrimp are well coated with the creamy sauce. Stir in the grated Parmesan cheese until melted and incorporated.

            Serve: Divide the shrimp ziti into bowls or plates. Garnish with fresh parsley and an extra sprinkle of Parmesan if desired.
