4 pieces of thick white bread or baguette

2 large eggs

200g minced chicken or beef

½ onion, finely chopped

2 tablespoons mayonnaise

2 tablespoons chili sauce

1 teaspoon garlic powder

Salt and pepper to taste

Fresh coriander leaves for garnish

Butter for frying

Instructions
 

In a mixing bowl, combine the minced chicken (or beef), chopped onion, garlic powder, salt, and pepper. Mix thoroughly until well combined.

    Heat a skillet over medium heat and melt a tablespoon of butter.

      Add the meat mixture to the skillet, cooking until it's fully cooked and browned, about 5-7 minutes. Set aside.

        In a separate bowl, whisk the eggs and season with a pinch of salt and pepper.

          In the same skillet, add a bit more butter and pour half of the beaten eggs, spreading them in a large circular shape. Allow it to cook for 1-2 minutes until set, but not fully cooked through.

            Place a piece of bread on top of the egg, pressing down gently to combine, then flip to cook the other side for an additional minute.

              Spread half the cooked meat mixture evenly on top of the egg and bread, and drizzle with mayonnaise and chili sauce.

                Top with another piece of bread and repeat the process for the second Roti John.

                  Once both sandwiches are assembled, cook them on each side for another 2-3 minutes until golden and crispy.

                    Remove from skillet, cut in half, and garnish with fresh coriander leaves.
