4 large russet potatoes

1 lb ground beef or plant-based ground meat

1 medium onion, diced

1 green bell pepper, diced

2 cloves garlic, minced

1 cup ketchup

2 tablespoons Worcestershire sauce

1 teaspoon chili powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1/4 cup green onions, chopped (for garnish)

Sour cream (optional, for serving)

Preheat your oven to 400°F (200°C). Scrub the russet potatoes under running water and pat them dry.

    Using a fork, poke holes all around each potato to allow steam to escape while baking. Place the potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until they're tender when pierced with a knife.

      While the potatoes are baking, heat a large skillet over medium heat. Add the diced onion and green bell pepper and sauté for 3-5 minutes, until they are softened.

        Add the minced garlic to the skillet and cook for an additional minute until fragrant.

          Push the vegetables to one side of the skillet and add the ground beef or plant-based meat. Cook until browned and cooked through, about 5-7 minutes, breaking it apart with a wooden spoon.

            Stir in the ketchup, Worcestershire sauce, chili powder, smoked paprika, and season with salt and pepper to taste. Simmer on low for about 10 minutes, allowing the flavors to meld.

              Once the potatoes are baked, remove them from the oven and let them cool slightly. Slice each potato down the middle, creating an opening.

                Fluff the insides of the potato lightly with a fork, then spoon the Sloppy Joe mixture generously into each potato.

                  Top each filled potato with shredded cheddar cheese and return them to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.

                    Remove from the oven, garnish with chopped green onions, and serve hot. Add a dollop of sour cream if desired.
