3-4 lbs pork shoulder, trimmed

2 cups apple cider

1 large onion, sliced

4 cloves garlic, minced

2 tablespoons brown sugar

1 tablespoon Dijon mustard

1 tablespoon smoked paprika

1 teaspoon cumin

1 teaspoon cinnamon

Salt and pepper to taste

2 tablespoons olive oil

1 cup apple slices, for serving (optional)

Fresh parsley, for garnish (optional)

Prepare the Pork: Start by patting the pork shoulder dry with paper towels. Season generously with salt, pepper, smoked paprika, cumin, and cinnamon on all sides.

    Sear the Meat: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned pork shoulder and sear it on all sides until browned (about 3-4 minutes per side). Remove from skillet and set aside.

      Sauté Onions and Garlic: In the same skillet, add sliced onions and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute, until fragrant.

        Combine Ingredients: In a slow cooker, combine the sautéed onions and garlic, brown sugar, Dijon mustard, and apple cider. Mix well to combine.

          Cook the Pork: Place the seared pork shoulder in the slow cooker, ensuring it is submerged in the apple cider mixture. Cover and cook on low for 8-10 hours or until the pork is tender and easily shredded with a fork.

            Shred the Pork: Once done, remove the pork from the slow cooker and let it rest for a few minutes. Shred the pork using two forks, discarding any excess fat.
