Ingredients

2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 cup salsa (your choice of spice level)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup chicken broth

Tortillas (flour or corn, your preference)

Optional toppings: diced avocado, chopped cilantro, shredded cheese, sour cream, lime wedges

Instructions

Start by placing the boneless, skinless chicken breasts at the bottom of the slow cooker.

Sprinkle the chili powder, cumin, garlic powder, onion powder, salt, and pepper evenly over the chicken.

Pour the salsa, black beans, corn, and chicken broth into the slow cooker, ensuring the chicken is well covered by the liquid and toppings.

Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and tender.

Once cooked, shred the chicken in the slow cooker using two forks, and mix well with the other ingredients, allowing the flavors to meld for an additional 10 minutes.

Serve the shredded chicken mixture warm on your choice of tortillas, and top with your preferred toppings such as diced avocado, cilantro, cheese, and a squeeze of fresh lime.

              Prep Time: 10 minutes | Total Time: 7 hours | Servings: 6-8
