1.5 lbs beef stew meat, cut into bite-sized pieces

4 medium-sized potatoes, diced into bite-sized chunks

1/4 cup unsalted butter

6 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 onion, chopped

2 cups beef broth

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Begin by preparing the ingredients: dice the potatoes, chop the onion, and mince the garlic.

    In a large skillet over medium-high heat, melt 2 tablespoons of the butter.

      Add the beef stew meat to the skillet, seasoning with salt, pepper, and smoked paprika. Sear the meat for about 5-7 minutes, until browned on all sides.

        Once browned, transfer the beef to the slow cooker.

          In the same skillet, add the remaining butter and sauté the chopped onion until translucent, about 3-4 minutes.

            Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

              Pour the mixture over the beef in the slow cooker.

                Add the diced potatoes, rosemary, thyme, and beef broth to the slow cooker. Stir gently to combine.

                  Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.

                    Once cooking is complete, taste and adjust seasoning if necessary.
