4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

4 cups chicken broth (low sodium)

2 cups milk (or plant-based alternative)

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 bay leaf

8 oz smoked sausage, sliced (e.g., kielbasa or bratwurst)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In your slow cooker, add the diced potatoes, chopped onion, minced garlic, diced carrots, and diced celery.

    Pour in the chicken broth, ensuring the vegetables are covered, and stir in the dried thyme, smoked paprika, and bay leaf.

      Add the sliced smoked sausage on top of the vegetable mixture, then cover and set the slow cooker to low heat for 6-8 hours or high heat for 3-4 hours.

        Once the cooking time has elapsed, remove the bay leaf. Use a potato masher to lightly mash some of the potatoes to thicken the soup, while leaving some chunks for texture.

          Stir in the milk, and add salt and pepper to taste. Let the soup heat through for an additional 15-20 minutes.

            Serve hot, garnished with freshly chopped parsley.
