1 lb pork sausage, sliced

6 oz bacon, cut into pieces

4 medium potatoes, peeled and diced

3 large carrots, sliced

1 large onion, sliced

4 cups chicken broth

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon dried thyme

Salt and pepper, to taste

Instructions
 

In a skillet over medium heat, cook the bacon pieces until crispy. Remove from the pan and set aside, saving some of the drippings.

    In the same skillet, brown the pork sausage slices in the bacon drippings for about 5 minutes. Remove and set aside.

      In the slow cooker, layer the diced potatoes and carrots at the bottom.

        Spread the sliced onion and minced garlic over the vegetables.

          Add the crispy bacon and browned sausage on top of the onions.

            Season with dried thyme, salt, and pepper.

              Pour the chicken broth over the layered ingredients in the slow cooker.

                Cover and cook on low for 8 hours or high for 4 hours until the vegetables are tender and flavors are well blended.

                  Before serving, stir the coddle gently and sprinkle chopped fresh parsley for a pop of color and flavor.
