1 cup sweet chili sauce

1/2 cup soy sauce (low sodium recommended)

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon grated ginger

3 cloves garlic, minced

1 bell pepper (red or yellow), sliced

1 small onion, sliced

1 tablespoon cornstarch (optional for thickening)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Cooked jasmine or brown rice (for serving)

Instructions
 

In a medium bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, sesame oil, grated ginger, and minced garlic until well combined.

    Place the boneless chicken thighs in the slow cooker and pour the sweet chili mixture over the top, ensuring the chicken is well coated.

      Add the sliced bell pepper and onion to the slow cooker, mixing gently to combine with the chicken and sauce.
