2 lbs ground beef (or a mix of beef and pork)

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 cans (15 oz each) kidney beans, drained and rinsed

1 can (28 oz) crushed tomatoes

2 tablespoons tomato paste

2 cups beef broth

2 tablespoons chili powder

1 tablespoon ground cumin

1 tablespoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, diced green onions, fresh cilantro

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until they are soft, about 5-7 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the ground beef (or beef and pork mixture) to the skillet. Cook until browned, breaking it up with a spoon, about 8-10 minutes. Drain excess fat if necessary.

        Transfer the cooked meat and vegetables into the slow cooker.

          Stir in the kidney beans, crushed tomatoes, tomato paste, and beef broth.

            Add in the chili powder, cumin, smoked paprika, cayenne pepper, and season with salt and pepper to taste. Mix thoroughly to combine all ingredients well.

              Cover the slow cooker and set it to low for 6-8 hours, or high for 3-4 hours to allow the flavors to meld and develop.

                Taste and adjust seasoning as necessary before serving.
