2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter, cold and cubed

3/4 cup buttermilk, cold

1 tablespoon honey (optional for a touch of sweetness)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

      Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, mix until the mixture resembles coarse crumbs.

        If using honey, stir it into the cold buttermilk, then gradually pour the buttermilk into the flour mixture. Mix with a fork until the dough just comes together. Do not overmix!

          Turn the dough out onto a lightly floured surface. Gently pat it into a rectangle about 1-inch thick.

            Fold the dough over onto itself three times (like folding a letter) to create layers for flakiness.

              Pat or roll the dough into a thickness of about 1/2 inch. Use a floured round cutter to cut out biscuits, pressing straight down without twisting.

                Place the biscuits close together on the baking sheet. For a softer biscuit, keep them touching; for a crustier one, space them out.

                  Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.

                    Remove from the oven and brush the tops with melted butter, if desired, for extra richness.
