4 large eggs

1 cup cooked black beans

1 cup diced tomatoes

1/2 cup diced bell peppers (red and green)

1 small onion, finely chopped

1-2 chipotle peppers in adobo sauce, minced

1 avocado, sliced

4 large flour tortillas

1/2 cup shredded cheddar cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell peppers, sautéing for 3-4 minutes until softened.

    Add Tomatoes: Stir in the diced tomatoes and cook for an additional 2 minutes until slightly softened.

      Incorporate Chipotle: Add the minced chipotle peppers and cook for another minute, mixing well to combine flavors.

        Scramble Eggs: In a bowl, whisk the eggs, season with salt and pepper, and pour into the skillet. Cook while gently stirring for about 3-4 minutes, until the eggs are just set.

          Combine Ingredients: Add the cooked black beans to the skillet and mix until everything is heated through. Remove from heat.

            Assemble Burritos: On each flour tortilla, place a quarter of the scrambled egg mixture. Top with sliced avocado and sprinkle with shredded cheddar cheese.

              Roll Burritos: Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom.

                Toast Burritos: In a clean skillet over medium heat, place the burritos seam-side down. Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
