Instructions
In a large pot, heat a little oil over medium heat. Add the minced ginger and garlic, stirring for 1-2 minutes until fragrant.
Stir in the red curry paste and cook for another minute to release its flavor.
Pour in the vegetable broth and coconut milk. Bring the mixture to a light simmer.
Add the soy sauce, sliced red bell pepper, and julienned carrot to the pot. Simmer for about 5-7 minutes until the vegetables are tender.
Meanwhile, cook the ramen noodles according to package instructions. Drain and set aside.
Once the vegetables are cooked to your liking, stir in the baby spinach and allow it to wilt for about 1-2 minutes.
Remove the pot from heat and add lime juice for a fresh zing.
To serve, place a portion of ramen noodles in a bowl and ladle the spicy coconut curry broth over the top.
Garnish with fresh cilantro, sliced green onions, and a sprinkle of red pepper flakes if desired for extra heat.
