1 cup sushi rice

1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

1 pound sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon sriracha (adjust for spice preference)

2 green onions, finely chopped

1 avocado, sliced

1 tablespoon sesame oil

1 tablespoon furikake seasoning

1 cup vegetable oil (for frying)

Instructions
 

Rinse the sushi rice under cold water until the water runs clear. This helps to remove excess starch.

    In a medium saucepan, combine the rinsed rice and 1 ¼ cups of water. Bring to a boil over medium-high heat, then cover, reduce the heat to low, and simmer for 15 minutes. Turn off the heat and let it sit, covered, for an additional 10 minutes.

      In a separate small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice has rested, transfer it to a large bowl and fold in the vinegar mixture gently. Allow the rice to cool to room temperature.

        In a separate bowl, combine the diced tuna, mayonnaise, sriracha, and chopped green onions. Mix well and set aside to marinate for about 10 minutes.

          Once the rice has cooled, shape it into small rectangular blocks (about 2 inches by 1 inch and 1/2 inch thick) using your hands.

            In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully place the rice blocks in the oil, frying them until golden brown and crispy on each side, about 2-3 minutes per side. Drain them on paper towels.

              To assemble, drizzle sesame oil over the crispy rice blocks, and top each with a spoonful of the spicy tuna mixture.

                Finally, garnish each piece with a slice of avocado and a sprinkle of furikake seasoning for added flavor.
