2 ribeye steaks (about 1 inch thick)

4 large russet potatoes

4 tablespoons unsalted butter

4 cloves of garlic, minced

2 tablespoons fresh parsley, chopped

Salt and freshly ground black pepper, to taste

1 tablespoon olive oil

Optional: paprika or smoked paprika for seasoning

Prepare the Potatoes: Peel the russet potatoes and cut them into fries. Rinse under cold water to remove excess starch, then soak them in water for at least 30 minutes to achieve crispiness.

    Blanch the Fries: In a large pot, bring salted water to a boil. Add the cut potatoes and blanch for 5-7 minutes or until slightly tender. Drain and let them cool on a paper towel for about 10 minutes.

      Fry the Potatoes: Heat vegetable or canola oil in a deep frying pan over medium-high heat. Once hot, add the blanched fries in batches (do not overcrowd). Fry until golden brown and crispy, about 5-7 minutes, flipping halfway. Use a slotted spoon to transfer them to a paper towel-lined plate and season with salt immediately.

        Cook the Steaks: While the fries are frying, season the ribeye steaks generously with salt, pepper, and optional paprika. Heat a skillet over high heat and add the olive oil. Once the skillet is hot, sear the steaks for 4-5 minutes on each side for medium-rare, adjusting the cooking time to your preference.

          Add Garlic Butter: In the last minute of cooking, reduce the heat to medium-low. Add the butter and minced garlic to the skillet. Once the butter melts, spoon it over the steaks repeatedly (this is called basting) for added flavor. Remove steaks from heat and let them rest for 5 minutes.

            Serve: Slice the steaks against the grain and sprinkle with fresh parsley. Plate the fries beside the steak and drizzle any leftover garlic butter from the pan over both for added flavor.
