Ingredients

1 lb flank steak, thinly sliced horizontally

1 cup roasted red peppers, sliced

1 cup fresh spinach leaves

½ cup goat cheese, crumbled

2 tablespoons balsamic glaze

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Olive oil for searing

Instructions

Prepare the Flank Steak: Place the thinly sliced flank steak between two sheets of plastic wrap. Use a meat mallet or rolling pin to gently pound it to an even thickness of about ½ inch.

Season the Steak: Remove the plastic wrap and sprinkle both sides of the steak with salt, pepper, and dried oregano.

Assemble the Filling: Spread the minced garlic evenly over the steak. Then, layer the roasted red peppers, fresh spinach leaves, and crumbled goat cheese on top. Drizzle with balsamic glaze for added flavor.

Roll the Steak: Starting from one end, carefully roll the steak tightly to form a log. Secure with kitchen twine or toothpicks at intervals to hold the filling in place.

Sear the Pinwheels: Heat a large skillet over medium-high heat and add a drizzle of olive oil. Once hot, add the steak pinwheels and sear for about 4-5 minutes on each side, or until they reach your desired doneness.

Rest and Slice: Remove the pinwheels from the skillet and let them rest for about 5 minutes. After resting, remove the twine or toothpicks and slice the pinwheels into 1-2 inch segments.

Serve: Arrange the sliced pinwheels on a platter, drizzled with additional balsamic glaze if desired and garnish with fresh herbs like basil or parsley.
