2 ribeye steaks (about 1 inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

1 bell pepper, sliced (any color)

1/2 cup pitted olives, halved (green or Kalamata)

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Instructions
 

Pat the ribeye steaks dry with paper towels, then season both sides generously with salt and pepper.

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steaks and sear for about 3-4 minutes on each side for medium-rare, depending on your preferred doneness. Remove the steaks from the skillet and set aside.

      In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

        Add the crushed tomatoes, oregano, basil, and red pepper flakes (if using) to the skillet. Stir to combine and let the sauce simmer for about 5 minutes.

          Add the sliced bell peppers and olives to the sauce, stirring to ensure they are coated. Allow the mixture to simmer for an additional 5-7 minutes until the peppers are tender.

            Return the seared steaks to the skillet, nestling them into the sauce. Spoon some of the sauce over the steaks and simmer together for about 3-4 minutes, allowing the flavors to meld.

              Remove from heat and let the dish rest for a few minutes before serving.
