4 chicken thighs, skin-on and bone-in

1/4 cup gochujang (Korean chili paste)

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon sesame seeds

2 green onions, sliced (for garnish)

Salt and pepper to taste

Marinate the Chicken: In a mixing bowl, combine gochujang, honey, soy sauce, rice vinegar, minced garlic, grated ginger, sesame oil, and a pinch of salt and pepper. Whisk until well blended.

    Combine Chicken and Marinade: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is evenly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, or overnight for best results.

      Preheat Oven: Preheat your oven to 400°F (200°C).

        Bake the Chicken: Place the marinated chicken thighs on a lined baking sheet. Bake in the preheated oven for 30-35 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C). Baste with the leftover marinade halfway through for extra flavor.

          Prepare the Glaze (optional): If you prefer a thicker glaze, strain the leftover marinade into a saucepan. Bring to a simmer and cook for about 5 minutes until slightly thickened. Brush some of this glaze over the chicken during the last 5 minutes of baking.

            Garnish and Serve: Once cooked, remove the chicken from the oven and sprinkle sesame seeds and sliced green onions on top for garnish. Serve warm with rice or stir-fried vegetables.
