1/3 cup heavy whipping cream

1/2 teaspoon lemon juice

1/2 cup white chocolate chips (optional)

Prepare the Crunch Base: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix well until it resembles wet sand.

    Form the Base: Press the mixture firmly into the bottom of a greased mini muffin tin to create the crust. Bake in a preheated oven at 350°F (175°C) for about 8-10 minutes until lightly golden. Let cool completely.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.

        Add Strawberries: Gently fold in the diced strawberries to the cream cheese mixture until evenly distributed.

          Whip the Cream: In a separate bowl, whip the heavy cream with lemon juice until stiff peaks form. Carefully fold the whipped cream into the cream cheese-strawberry mixture to create a light, airy filling.

            Assemble the Bites: Spoon or pipe the cheesecake filling over the cooled graham cracker crust in the muffin tin, filling each cup generously.

              Chill: Place the muffin tin in the refrigerator and let the bites chill for at least 2 hours to set up properly.

                (Optional) Drizzle White Chocolate: If using white chocolate chips, melt them in a microwave-safe bowl in 30-second intervals until smooth. Drizzle over the chilled cheesecake bites before serving.
