Ingredients
  

2 cups fresh strawberries, hulled and chopped

1/2 cup coconut water or lemonade

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1/2 teaspoon vanilla extract

1 tablespoon lemon juice

Instructions
 

Start by placing the chopped strawberries in a blender or food processor. Blend until smooth, leaving some small chunks for texture if desired.

    In a mixing bowl, combine the blended strawberries, coconut water (or lemonade), honey (or maple syrup), vanilla extract, and lemon juice. Stir until well combined.

      Taste the mixture and adjust sweetness if necessary, adding more honey or syrup for desired sweetness.

        Pour the mixture evenly into popsicle molds, filling them about 3/4 full to allow for expansion.

          Insert popsicle sticks into the molds and freeze for at least 4 hours, or until fully solid.

            To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out.
