1 cup cooked white or brown rice

1 lb chicken breast, diced

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

2 cups corn kernels (fresh, frozen, or canned)

1/4 cup mayonnaise

1/4 cup crumbled feta cheese

1 tablespoon lime juice

1/4 cup fresh cilantro, chopped

1 avocado, sliced

In a large skillet, heat olive oil over medium heat. Add the diced chicken breast, chili powder, cumin, garlic powder, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 7-10 minutes. Set aside.
