1.5 pounds flank steak

1 cup cooked spinach, chopped

1 cup ricotta cheese

1/2 cup feta cheese, crumbled

1/4 cup sun-dried tomatoes, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

3 tablespoons olive oil

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Place the flank steak on a clean cutting board, with the grain running horizontally. Carefully butterfly the steak by slicing it horizontally, leaving about half an inch intact on one side. Open the steak like a book.

      In a mixing bowl, combine the cooked spinach, ricotta cheese, feta cheese, sun-dried tomatoes, minced garlic, oregano, salt, and black pepper. Mix well until everything is evenly combined.

        Spread the filling mixture evenly over the opened flank steak, leaving a small border around the edges.

          Carefully roll the flank steak back up, starting from the filled side. If the filling seeps out, press it back in as you roll.

            Tightly tie the rolled flank steak with cooking twine at several intervals to hold it together.

              Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the rolled steak for 3-4 minutes on each side until browned.

                Transfer the seared steak to the prepared baking sheet and drizzle with the remaining olive oil.

                  Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C) for medium rare.

                    Once cooked, remove from the oven and let rest for 10 minutes before carefully slicing.
