2 teaspoons dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup chicken broth

1 tablespoon olive oil

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium-high heat. Sauté the chopped onion and minced garlic until softened, about 3-5 minutes.

      In a large mixing bowl, combine the sautéed onion and garlic with the bread crumbs, crumbled sausage, dried cranberries, toasted pecans, parsley, thyme, salt, and pepper. Mix well.

        Gradually add the chicken broth to the mixture, ensuring that it holds together but isn't too soggy.

          Carefully prepare the pork crown roast by pulling the bones into a circular shape and tying them together with kitchen twine to maintain its shape.

            Fill the center cavity of the crown with the stuffing mixture, gently packing it in. Use any leftover stuffing to fill a small baking dish.

              Place the stuffed crown roast in a roasting pan and cover the tips of the bones with foil to prevent burning.

                Roast in the preheated oven for about 1.5 to 2 hours or until the internal temperature reaches 145°F (63°C). Cooking time may vary depending on the size of the roast.

                  If using leftover stuffing, bake it in a separate dish alongside the roast until golden and heated through, about 30-40 minutes.

                    Once done, remove the crown roast from the oven and let it rest for 15 to 20 minutes before carving.

                      Slice the pork between the bones for serving, and serve with the baked stuffing alongside.
