1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ teaspoon almond extract (optional)

½ cup frosting (vanilla or your choice)

Preheat your oven to 350°F (175°C) and prepare a muffin tin by lightly greasing it with cooking spray or lining it with paper liners.

    In a medium mixing bowl, whisk together the flour, baking powder, and salt. Set aside.

      In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.

        Beat in the egg and both extracts until well combined.

          Gradually add the dry flour mixture to the wet ingredients, mixing just until combined. Do not overmix.

            Using a cookie scoop or tablespoon, drop rounded balls of dough into each muffin tin cup.

              With your fingers or the back of a small measuring cup, press down the dough in the center of each cup to create a well. The edges should rise above the top of the tin.

                Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let the cookie cups cool in the pan for about 5 minutes.

                  After cooling slightly, carefully remove the cookie cups by gently twisting them out of the muffin tin. Let them cool completely on a wire rack.

                    Once cooled, fill each cookie cup with frosting and top with sprinkles or edible glitter for a festive touch.
