Ingredients

1 cup fresh blueberries

1 tablespoon sugar-free blueberry syrup

1 cup sparkling water (chilled)

1/2 cup heavy cream

Ice cubes

Fresh mint leaves for garnish (optional)

Instructions

In a small saucepan, combine the fresh blueberries and 1/4 cup of water over medium heat.

Cook the blueberries, stirring occasionally, until they begin to break down and release their juices (about 5-7 minutes).

Remove from heat and strain the mixture through a fine mesh sieve into a bowl to get the blueberry puree. Discard the solids.

Add the sugar-free blueberry syrup to the blueberry puree and mix well to combine.

Fill a glass with ice cubes and pour the blueberry mixture until it reaches halfway.

Top the glass with chilled sparkling water, giving it a gentle stir to mix.

In a separate bowl, whip the heavy cream until soft peaks form. You can sweeten it further with a touch of sugar-free sweetener if desired.

Spoon the whipped cream over the sparkling blueberry soda.

Garnish with fresh mint leaves if using, and enjoy your refreshing drink!
