Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the nut butter and sugar-free sweetener until smooth and well blended.
Add the egg, vanilla extract, baking soda, and salt to the mixture. Stir until fully incorporated.
Fold in the dark chocolate chips and optional mix-ins like nuts or dried fruit.
Using a tablespoon, scoop out portions of dough and place them onto the prepared baking sheet, leaving space between each cookie as they will spread slightly.
Gently flatten each cookie with the back of a fork or your fingers for a more uniform shape.
Bake in the preheated oven for 10-12 minutes or until the edges are slightly golden.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
