Ingredients
  

200g pasta of choice (e.g. penne or spaghetti)

100g sun-dried tomatoes (packed in oil)

1 cup fresh basil leaves

1/4 cup pine nuts

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 cup olive oil

Salt and pepper to taste

Optional: Cherry tomatoes for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.

    Prepare the Pesto: In a food processor, combine sun-dried tomatoes (drained of excess oil), fresh basil leaves, pine nuts, Parmesan cheese, and minced garlic. Pulse until the mixture is well combined but still a bit chunky.

      Add Olive Oil: With the food processor running, slowly drizzle in the olive oil until the pesto reaches your desired consistency—smooth and creamy without being too oily. Season with salt and pepper to taste.

        Mix with Pasta: In a large mixing bowl, combine the cooked pasta with the sun-dried tomato pesto. If the mixture seems too dry, add some reserved pasta water a little at a time until you achieve the desired creaminess.

          Serve: Plate the pasta and garnish with halved cherry tomatoes for a pop of color and freshness.
