Ingredients
  

3 large carrots, grated

1 large green apple, grated (such as Granny Smith)

1 cup purple cabbage, finely shredded

1/2 cup plain Greek yogurt

2 tablespoons apple cider vinegar

2 tablespoons honey

1 teaspoon Dijon mustard

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup chopped walnuts (optional)

Fresh parsley for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots, grated apple, and shredded purple cabbage. Stir until evenly mixed.

    In a separate small bowl, whisk together the Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth to create the dressing.

      Pour the dressing over the grated vegetables and mix well until everything is coated.

        If desired, fold in the chopped walnuts for an extra crunch.

          Taste and adjust salt and honey according to your preference.

            Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

              Before serving, give the coleslaw a gentle toss and garnish with fresh parsley, if using.
