Ingredients

4 large sweet potatoes, peeled and cubed

1/2 cup unsalted butter, melted

1/2 cup brown sugar

1/4 cup maple syrup

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup milk (or almond milk for a dairy-free option)

2 cups mini marshmallows

1/2 cup chopped pecans (optional)

1/2 cup crushed gingersnap cookies (optional for topping)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C).

Cook Sweet Potatoes: In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly.

Mash Sweet Potatoes: In a mixing bowl, mash the sweet potatoes until smooth. You can use a potato masher or a hand mixer to achieve your desired consistency.

Mix Ingredients: Add melted butter, brown sugar, maple syrup, vanilla extract, cinnamon, nutmeg, salt, and milk to the mashed sweet potatoes. Mix until well combined and creamy.

Transfer to Baking Dish: Pour the sweet potato mixture into a greased 9x13-inch baking dish, spreading evenly with a spatula.

Add Marshmallows: Sprinkle the mini marshmallows evenly over the top of the sweet potato mixture. If using, add chopped pecans and crushed gingersnap cookies for an extra crunch.

Bake: Bake in the preheated oven for 25-30 minutes, or until the marshmallows are golden brown and slightly puffed.

Cool and Serve: Remove from the oven and let the casserole cool for a few minutes before serving.
