2 cups fresh cherries, pitted and halved

1 tablespoon freshly grated ginger

4 cups water

2 black tea bags (or 2 tablespoons loose leaf black tea)

1/4 cup honey or agave syrup (adjust to taste)

1 teaspoon cinnamon

1/4 teaspoon cayenne pepper (optional, for heat)

Lemon slices and fresh mint leaves for garnish

Instructions
 

In a medium saucepan, combine the pitted and halved cherries with the grated ginger and 2 cups of water.

    Bring the mixture to a gentle boil over medium heat, then reduce heat to low and let it simmer for about 10 minutes, allowing the flavors to meld and the cherries to soften.

      Remove the saucepan from the heat and strain the liquid into a large pitcher, discarding the solids.

        In the same saucepan, bring the remaining 2 cups of water to a boil. Once boiling, remove from heat and steep the black tea bags in the hot water for 5 minutes.

          Remove the tea bags and pour the brewed tea into the pitcher with the cherry-ginger mixture.

            Stir in the honey (or agave syrup), cinnamon, and cayenne pepper if using, adjusting sweetness and spice to your taste.

              Allow the tea to cool to room temperature, then refrigerate until chilled (about 1-2 hours).

                Serve over ice in glasses, garnished with lemon slices and fresh mint leaves.
