1 package of mini tortilla cups (or you can make your own using flour tortillas)

1 pound ground turkey or beef

1 packet taco seasoning

1 cup black beans, rinsed and drained

1 cup corn kernels, frozen or fresh

1 cup diced bell peppers (any color)

1 cup shredded cheddar cheese

1 cup sour cream or Greek yogurt

1 avocado, diced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the oven to 375°F (190°C). If using flour tortillas, cut them into circles to fit into a muffin tin and press them into the cups, then bake for 5 minutes to crisp them up slightly.

    In a skillet over medium heat, brown the ground turkey or beef, breaking it apart as it cooks. Drain any excess fat if necessary.

      Add the taco seasoning to the meat along with 1/4 cup of water, stirring to combine. Let it simmer for about 5 minutes until the mixture thickens.

        In a separate bowl, mix together the black beans, corn, and diced bell peppers.

          Construct the taco cups by placing a spoonful of the seasoned meat mixture into each tortilla cup, followed by the black bean mixture.

            Sprinkle shredded cheddar cheese generously on top of each cup.

              Bake the filled cups in the oven for 10-12 minutes, or until the cheese is melted and bubbly.

                Remove from the oven and allow to cool slightly before serving.

                  Top each taco cup with a dollop of sour cream or Greek yogurt, diced avocado, and fresh cilantro.

                    Serve warm with lime wedges on the side for an extra burst of flavor.
