Ingredients
  

1 lb ground beef or turkey

1 can black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 packet taco seasoning

1 cup diced tomatoes

1 cup shredded lettuce

1 cup shredded cheese (cheddar or Mexican blend)

1 ripe avocado, diced

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

8 small soft taco tortillas

Lime wedges for serving

Hot sauce (optional)

Instructions
 

In a large skillet over medium heat, cook the ground beef or turkey until no longer pink, breaking it apart with a spoon.

    Once the meat is cooked, drain any excess grease, then add the taco seasoning along with 1/4 cup of water. Stir well and let simmer for about 5 minutes until the mixture thickens.

      Stir in the black beans and corn. Cook for an additional 2-3 minutes until heated through. Remove from heat.

        Warm the taco tortillas in a dry skillet over medium heat for about 1 minute on each side, or wrap in foil and heat in the oven at 350°F (175°C) for 10 minutes.

          To assemble tacos, take a warm tortilla and fill it with the meat mixture. Top with diced tomatoes, shredded lettuce, cheese, avocado, and sour cream.

            Garnish with fresh cilantro and serve lime wedges alongside for squeezing over the tacos.

              Add hot sauce to taste if you prefer a spicy kick.
