9 oz refrigerated cheese tortellini

1 lb ground beef or turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

2 cups chicken broth

1 can (14 oz) diced tomatoes, with juices

1 cup corn (fresh or frozen)

1 cup black beans, drained and rinsed

1 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Jalapeños (sliced, for serving)

Instructions
 

In a large pot or deep skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Add the minced garlic and ground beef (or turkey) to the pot. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

      Sprinkle the taco seasoning over the meat mixture, stirring to combine well. Cook for another minute to allow the spices to bloom.

        Pour in the chicken broth and diced tomatoes (with juices), stirring to mix everything evenly.

          Gently add the tortellini, corn, and black beans to the pot. Stir to ensure the tortellini is submerged in the liquid.

            Bring the mixture to a gentle boil, then reduce heat to a simmer. Cover and cook for about 8-10 minutes, or until the tortellini are tender and cooked through.

              Once cooked, remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy.

                Serve hot, garnished with fresh cilantro and your choice of sour cream and jalapeño slices on top.
