Ingredients

2 cups all-purpose flour

1 ½ cups granulated sugar

1 cup pineapple juice (preferably fresh)

½ cup unsweetened applesauce

½ cup vegetable oil

3 large eggs

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon vanilla extract

1 cup crushed pineapple, drained

Optional: Powdered sugar for dusting

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk together until well mixed.

In another bowl, whisk together the sugar, vegetable oil, applesauce, and eggs until smooth.

Gradually mix in the pineapple juice and vanilla extract into the wet mixture until combined.

Slowly fold the dry ingredients into the wet ingredients until just combined. Do not overmix.

Gently fold in the crushed pineapple until evenly distributed throughout the batter.

Pour the batter into the prepared baking pan, spreading it evenly.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

If desired, dust the top of the cooled cake with powdered sugar before serving for a touch of sweetness.
