1 lb shrimp, cleaned and deveined

1 can (13.5 oz) coconut milk

1 medium onion, sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons red curry paste

1 tablespoon fish sauce

1 tablespoon brown sugar

1 bell pepper (red or yellow), sliced

1 cup snap peas

2 tablespoons vegetable oil

Fresh cilantro, for garnish

Lime wedges, for serving

Cooked jasmine rice, for serving

Instructions
 

Prepare Your Ingredients: Begin by cleaning and deveining the shrimp. Slice the onion, bell pepper, and snap peas, and mince the garlic and ginger.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium heat.

      Sauté the Aromatics: Add the sliced onion and sauté until translucent, about 3-4 minutes. Next, add the minced garlic and ginger, stirring for another 1-2 minutes until fragrant.

        Add Curry Paste: Stir in the red curry paste and cook for 2 minutes to combine the flavors.

          Incorporate Coconut Milk: Pour in the coconut milk and stir well to dissolve the curry paste.

            Flavor It: Add the fish sauce and brown sugar, mixing to combine, and let the sauce simmer for about 5 minutes.

              Add Vegetables: Toss in the sliced bell pepper and snap peas, allowing them to cook for an additional 3-4 minutes until they are tender but still vibrant.

                Cook the Shrimp: Add the shrimp to the skillet, stirring gently. Cook for about 3-5 minutes, or until the shrimp turn pink and opaque.

                  Serve: Once everything is perfectly cooked, remove from heat. Taste and adjust seasoning if necessary.

                    Garnish: Serve hot over jasmine rice, garnished with fresh cilantro and lime wedges on the side.
