4 cups water (for soaking)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1/2 cup brown sugar

1/4 cup maple syrup

1/4 cup apple cider vinegar

2 tablespoons Dijon mustard

1 tablespoon Worcestershire sauce (non-alcoholic)

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (optional)

Salt and black pepper to taste

1 cup diced cooked bacon or vegetarian bacon (optional)

Soak the Beans: Place the dry navy beans in a large bowl and cover with 4 cups of water. Let them soak overnight or for at least 8 hours. Drain and rinse the beans before cooking.

    Cook the Beans: In a large pot, add the soaked beans and cover with fresh water. Bring to a boil, then reduce to a simmer. Cook beans for about 1 to 1.5 hours, or until tender but not mushy. Drain and set aside.
