1 pound breakfast sausage (your choice: mild or spicy)

6 large eggs

2 cups milk (whole or 2%)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

4 cups cubed day-old bread (sourdough or white bread)

1 cup shredded cheddar cheese

1 cup diced bell peppers (mixed colors for vibrancy)

1/2 cup chopped green onions

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.

    In a large skillet, cook the breakfast sausage over medium heat until browned and cooked through, breaking it into crumbles with a spatula. Drain excess fat and set aside.

      In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, oregano, salt, and black pepper until well combined.

        Layer the cubed bread into the greased baking dish evenly across the bottom.

          Sprinkle the cooked sausage over the bread cubes, followed by the diced bell peppers and half of the green onions.

            Pour the egg mixture evenly over the entire casserole, ensuring it saturates the bread and ingredients thoroughly.

              Top with shredded cheddar cheese and the remaining green onions.

                Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

                  After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the casserole is set in the center and the top is golden brown.

                    Let it cool for 5-10 minutes before slicing and serving.
