1 pound lean ground beef (80/20 blend)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup bell peppers (any color), diced

1 tablespoon Worcestershire sauce

2 tablespoons ketchup

1 tablespoon mustard

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper to taste

4 slices of Swiss cheese

4 sandwich rolls (preferably crusty)

Fresh arugula or lettuce (for garnish)

Instructions
 

In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and garlic. Sauté until the onions are translucent, about 3-4 minutes.

    Add the diced bell peppers to the skillet, cooking for an additional 2-3 minutes until they start to soften.

      Increase the heat to medium-high and add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

        Stir in the Worcestershire sauce, ketchup, mustard, smoked paprika, chili powder, and season with salt and pepper. Mix well and let it simmer for about 5 minutes, allowing the flavors to meld together.

          During the last minute of cooking, place a slice of Swiss cheese on top of each portion of the beef mixture, covering the skillet with a lid to melt the cheese.

            While the cheese melts, slice the sandwich rolls in half and lightly toast them if desired.

              To assemble, spoon a generous portion of the beef and cheese mixture onto the bottom half of each roll. Top with fresh arugula or lettuce, then place the top half of the roll on the sandwich.

                Serve immediately and enjoy your hearty Original Joe Sandwich!
