1 lb beef chuck, cut into 1-inch cubes

3 tablespoons vegetable oil

2 medium onions, diced

3 cloves garlic, minced

2 bell peppers (red and yellow), diced

2 medium carrots, sliced

2 medium potatoes, diced

1 can (14 oz) diced tomatoes

3 tablespoons paprika (sweet or smoked)

2 teaspoons caraway seeds

4 cups beef broth

1 tablespoon apple cider vinegar

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large heavy pot or Dutch oven, heat the vegetable oil over medium-high heat.

    Season the beef cubes with salt and pepper, then add them to the pot in batches. Sear for about 5-6 minutes until browned on all sides. Remove and set aside.

      In the same pot, add the diced onions and sauté for about 5 minutes until they are translucent.

        Stir in the minced garlic and cook for an additional minute.

          Add the diced bell peppers and carrots to the pot, and sauté for another 5 minutes until they begin to soften.

            Sprinkle the paprika and caraway seeds over the vegetables, stirring well to combine and release their flavors.

              Return the beef to the pot, then add the diced tomatoes, beef broth, and apple cider vinegar. Stir well to combine all ingredients.

                Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and flavors are well blended.

                  About 30 minutes before the goulash is done, add the diced potatoes to the pot.

                    Adjust seasoning with salt and pepper as needed.
