1 block (14 oz) firm tofu, drained and pressed

1/4 cup vegan mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/4 cup celery, finely chopped

1/4 cup red bell pepper, finely chopped

1/4 cup shredded carrots

2 tablespoons green onions, sliced

1 teaspoon garlic powder

Salt and black pepper, to taste

4 slices whole grain bread

Fresh lettuce leaves (for serving)

Optional: sliced avocado and tomato for garnish

Instructions
 

Start by crumbling the pressed tofu into small pieces using your hands or a fork in a large mixing bowl.

    Add the vegan mayonnaise, Dijon mustard, and lemon juice to the bowl, and mix until the tofu is well coated and creamy.

      Stir in the chopped celery, red bell pepper, shredded carrots, and green onions.

        Season the mixture with garlic powder, salt, and black pepper to taste. Mix everything well until combined.

          On two slices of whole grain bread, layer fresh lettuce leaves, followed by generous scoops of the tofu salad mixture.

            If desired, top with sliced avocado and tomato for added flavor and garnish.

              Place the remaining slices of bread on top to complete the sandwiches.
