4 large eggs

2 medium-sized Yukon Gold potatoes, peeled and thinly sliced

1 large onion, thinly sliced

1/4 cup extra virgin olive oil

Salt to taste

Freshly cracked black pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the thinly sliced potatoes and onion, taking care to season with salt. Cook gently for about 15-20 minutes, stirring occasionally, until the potatoes are tender but not browned.

    Once the potatoes and onions are cooked, drain them from the oil using a slotted spoon, then set aside to cool slightly. Reserve the olive oil for later use.

      In a large bowl, whisk together the eggs. Add the cooled potatoes and onions to the egg mixture, along with freshly cracked black pepper. Stir gently to combine, ensuring the potatoes are evenly coated.

        In the same skillet, add a tablespoon of the reserved olive oil and heat over medium-low heat. Pour the egg and potato mixture into the skillet, spreading it evenly. Cook for about 5-7 minutes, or until the edges begin to set and the bottom is golden brown.

          Carefully flip the tortilla using a large plate: place the plate over the skillet, invert it to transfer the tortilla onto the plate, then slide it back into the skillet to cook the other side for another 5 minutes.

            Once both sides are done and the center is cooked through but still slightly soft, remove the tortilla from the skillet and let it cool slightly before slicing.

              Serve warm or at room temperature, garnished with fresh parsley if desired.
