Ingredients

1 cup fresh diced tomatoes

1 cup shredded mozzarella cheese

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon fresh basil, chopped

1 tablespoon balsamic glaze

1 tablespoon olive oil

Salt and pepper to taste

Sliced baguette or crackers for serving

Instructions

Preheat your oven to 375°F (190°C).

In a mixing bowl, combine the diced tomatoes, minced garlic, chopped basil, balsamic glaze, and olive oil. Season with salt and pepper to taste. Stir until well mixed.

In a separate bowl, combine the ricotta cheese and half of the shredded mozzarella cheese, mixing until smooth.

In a baking dish, spread the ricotta and mozzarella mixture evenly on the bottom.

Pour the tomato mixture over the cheese layer, spreading it evenly across the top.

Sprinkle the remaining mozzarella cheese and grated Parmesan cheese over the tomato layer for extra cheesiness.

Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown on top.

Remove the dish from the oven and let it cool for a few minutes before serving.

Serve warm with slices of baguette or crackers for dipping.
