Instructions
In a large mixing bowl, combine the shredded chicken, diced pineapple, red bell pepper, cucumber, and red onion. Stir until evenly mixed.
In a separate bowl, whisk together the Greek yogurt, mayonnaise, lime juice, honey, salt, and pepper until smooth and creamy.
Pour the dressing over the chicken mixture and gently toss to coat all the ingredients evenly.
Fold in the chopped cilantro and toasted sliced almonds for added crunch and flavor.
Taste and adjust seasoning if needed, adding more salt, pepper, or lime juice as desired.
Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
Serve chilled, garnished with additional cilantro or a slice of fresh pineapple on top if desired.
