4 boneless, skinless chicken thighs

1 cup cherry tomatoes, halved

1 zucchini, sliced

1 red bell pepper, sliced

1 yellow onion, sliced

4 cloves garlic, minced

2 teaspoons Italian seasoning

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (optional)

3 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the chicken thighs, minced garlic, Italian seasoning, smoked paprika, red pepper flakes, olive oil, salt, and pepper. Mix until the chicken is well coated in the seasoning.

      On a large sheet pan, arrange the seasoned chicken thighs in the center. Surround them with cherry tomatoes, zucchini, red bell pepper, and onion slices.

        Drizzle any remaining olive oil over the vegetables and season them with a little salt and pepper.

          Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 75°C) and the veggies are tender and slightly caramelized.

            Once done, remove the sheet pan from the oven and let it rest for 5 minutes before serving.

              Garnish with fresh basil leaves to add a burst of flavor and color.
