20 jumbo pasta shells

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

1 large egg, lightly beaten

2 cups spinach, fresh or thawed and drained

1/2 cup sun-dried tomatoes, chopped

1 teaspoon garlic powder

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Boil a large pot of salted water, and cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside to cool.

      In a large bowl, combine the ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, beaten egg, spinach, sun-dried tomatoes, garlic powder, dried basil, dried oregano, salt, and pepper. Mix until well combined.

        Carefully fill each cooked pasta shell with the cheese mixture, using a spoon or a piping bag for easier handling.

          Spread about 1 cup of marinara sauce at the bottom of a 9x13 inch baking dish. Arrange the stuffed shells on top of the sauce, then pour the remaining sauce over the shells.

            Sprinkle the remaining mozzarella cheese over the top of the shells.

              Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and lightly golden.

                Remove from the oven and let it sit for a few minutes before serving. Garnish with fresh basil leaves.
